Fat Cinnamon Peach Banana Bread1
We woke up early this morning wanting to bake a banana bread. I silently mashed bananas in my kitchen and viewed the sunshine creep through the windows. I mean to be properly honest all I wanted to do was turn on Jay-Z’s 99 problems, gluten free cheesecake dessert recipes sing loudly and switch the lyrics to I acquired 99 problems but BANANA Loaf of bread AIN’T ONE!” Too poor my roommates were still sleeping or it totally could have happened.
Now that I believe about any of it I’m kinda glad I didn’t as I can’t state that rapping is among my talents. And when you don’t understand who Jay-Z is definitely then probably we’ll just move on and discuss the real celebrity here: Banana bread. With peaches. Annndddd cinnamon. A dark brown sugar topping as well!
It simply makes me experience all cozy and wonderful.
Since there are a good amount of peaches in August, I needed to enable you to get a fun recipe. Needless to say peach pie is usually delicious and peach cobbler can be amazing but those are classics, and I needed to bake something just a little creative to make you swoon. The solution been staring right at me: ripe bananas on my kitchen counter! I have no idea, it’s like these bananas simply beg me to become mashed into delicious breads or something. Or to be produced into pie.
Either way I understand that anytime there are ripe bananas around, magic is going to happen. Hehe.
Look at that crust at the top of the banana breads! No seriously, stare at it for an excellent minute.
The crust is merely perfectly golden brown and the result of sprinkling brown sugar at the top before cooking. The brown glucose caramelizes and hardens when baked then forms a nice crusty exterior for your outstanding crunchy topping.
Oh and the inside? Therefore flavorful and moist! Plus who can feel guilty about this bread? Not really me considering I currently ate 3 slices.
This bread is downright sensational. The peaches add a juicy taste and a gorgeous addition to the very best. Of course the bananas are more prominent which the peaches flavorwise, but still the juicy bits of peaches surprise you with every bite and the cinnamon really makes the taste pop.
I wanted to maintain this bread lower in fat and calories so I used minimal butter and non-fat greek yogurt. I didn’t have any whole wheat flour in my cupboard, or I would have used a few of that within the recipe rather than only using bleached flour.
1 teaspoon cooking powder
3/4 teaspoon cooking soda
1 cup mashed banana
1 cup finely diced peaches (about 2 peaches), plus about 8-10 thin peach slices for topping
1/2 cup packed darkish sugars, plus 2 tablespoons for topping
2 tablespoons butter, browned or melted (you can also use coconut, olive, or canola oil)
Preheat oven to 350 degrees F. Grease a 9-inches loaf pan.
In a medium mixing bowl, combine flour, baking soda pop, cinnamon and sodium together and reserve.
In a big mixing dish, whisk jointly mashed bananas, butter, 1/2 cup brown sugar until well combined. Add vanilla and egg and whisk once again until well mixed. Whisk in diced peaches. Add dry ingredients and yogurt on the other hand, folding jointly well combined.
Pour batter into loaf pan. Best with thinly chopped up peaches and sprinkle 2 tablespoons of brown sugar over the top. Dust lightly with cinnamon. Bake for 60-70 a few minutes, or toothpick arrives almost clean in middle.
Cool for 10 minutes in skillet, then remove from pan gently and transfer to wire rack. Cool completely. Cut into heavy slices and revel in!
Can replace a number of the all purpose flour with whole wheat grains.
Bread is way better the very next day.
