Hello you lovely souls. I’m seated in a beautiful, cozy king bed writing to you from Hilton Mind Health , an exercise and wellness holiday resort in Hilton Head, SC. This past week continues to be so refreshing for me personally in more methods than I could fathom to write about. Sometimes you merely can’t placed into words what you feel when your heart is steady and content. Personally i think beyond lucky to be invited right here; the motivation in wellness classes, new friends and being truly a little more susceptible has still left me having a realization that I must let go of my doubts of judgement with regards to blogging and being more personal.
My goodness is it possible to believe AK continues to be cooking for just a little more than three years? I’ve written here about my entire life experiences, career changes, moving, relationships, friendships and my ever developing obsession with Zac Efron.
What I haven’t included is my true and constant battle with food; certainly it’s the love of my life (questionable due to Tony). I don’t want this post to become too heavy, but do want you to learn that this blog page changes and grow, just as any individual does. And as any relationship will go, I am hoping we’re in this together; that you’ll still arrived at AK to create my recipes because they certainly are not going away. I’ll just be writing more about this journey I’m on.

But plenty of serious business. Let’s obtain onto the treats I baked for you personally today! Flourless Pumpkin Almond Butter Bars. I know, right? With chocolates and perhaps some coconut if you extravagant it (you SO fancyyy).
I’m so content that these bars cooked up so delightfully and filled with pumpkin flavor. I used to be scared the almond butter would come through too much, but it works out that these satisfy a pumpkin craving like no other.
What I’m specifically excited about is the wonderful diet in these bars. Plenty of vitamin supplements plus antioxidants (from chocolates) going on. They’re also gluten free, low carb, dairy free of charge, paleo and grain free. I’m fairly certain you could very easily veganize them with the addition of a flax egg (1 T ground flax seed + 3 tablespoons drinking water). I really like enjoying mine in the afternoon having a big sit down elsewhere.
To serve them as a dessert, I would recommend topping them off with just a little coconut whipped cream or homemade almond butter smeared outrageous having a sprinkle of ocean salt. Just trust me on this one men; special and salty is definitely the answer.

Formula type: Gluten Free of charge, Dairy Free, Flourless, LOW CARBOHYDRATE, Grain Free
1/2 cup pumpkin puree
1 teaspoon cinnamon
1/8 teaspoon ginger
1/8 teaspoon nutmeg
pinch of cloves
1/2 cup unsweetened coconut flakes, divided
3 oz your preferred dark chocolate bar (at least 70% cocoa), coarsely chopped
Preheat oven to 350 degrees F. Apply an 8×8 inches baking skillet with nonstick cooking spray.
In a large bowl, whisk jointly all ingredients except coconut and chocolates. Once substances are well combined, fold in 1/4 glass from the coconut flakes and all the dark chocolate.
Pour into prepared pan and sprinkle the rest of the coconut flakes on top. Bake for 20 mins or until somewhat golden brown within the edges. Place skillet on wire rack to awesome. Once cool, lower into 16 squares. Enjoy!

TO CREATE VEGAN: Use a flax egg to replace the egg.
If you omit the coconut and delicious chocolate, each club (predicated on 16 bars) is only around 67 calorie consumption.
If you simply leave out the coconut, the bars will be a little under 100 calorie consumption.
Instead of almond butter, you can use another natural nut butter of your choice. I don’t recommend sunflower seed butter. Peanut butter will be delicious!
