Pepper Jack Stuffed Turkey Zucchini Meat Loaf with Awesome Sauce

HEALTHY LOW CARB Turkey Zucchini Meat Loaf stuffed with pepper jack and topped with the most great tasting sauce EVER!

Zucchini, zucchini, ZUCCHINI. It’s overtaking my entire life. I’m uncertain I mind so much, but I could let you know that I’m getting sick of shredding the zucchini. I have some more to consume but after that I don’t think you’ll see another zucchini formula from me in quite sometime. My best arm actually hurts from zucchini shredding syndrome. Yes, it’s officially a symptoms (within the AK book in any case).

I realize I’ve been doing various baked items with zucchini so this time I needed to bring you something just a little savory such as this turkey zucchini meatloaf. I decided that adding some zucchini to a turkey meatloaf wouldn’t normally only be a great way to obtain my vegetables in, but additionally to add wetness (since I take advantage of lean turkey).

And as if that wasn’t plenty of, I just needed to throw in just a little pepper jack in the middle because I’m about a little kick. It’s funny, I in fact don’t consider pepper jack to become spicy; my Mother used to serve jalapenos at nearly every meal so I think my taste buds have adapted to the stage where I can pour oodles of Sriracha on my foods without any effect.

Not sure in the event that’s a good thing or not?

So, for all of you mamas available or food preppers that is an excellent healthy formula and makes terrific leftovers. I was chowing down on it for a couple days with a good sweet potato privately.

The awesome sauce is well… AWESOME. It’s lovely but spicy and really adds a ton of flavor to the meatloaf. (It’s originally from my lentil loaf recipe)

And please don’t put that Heinz corn syrup stuff on your own meatloaf. Yes I just stated that; don’t hate me!

I’m an enormous enthusiast of ketchup (such as I put that sht on everything and We don’t purchase Heinz), nevertheless, you can easily produce delicious EASY homemade amazing meatloaf sauce yourself. Trust in the power of the recipe.

Okay now i am craving brownies and have more zucchini waiting. Wish me good luck.

15 mins

Cook time:

45 mins

Total time:

1 hour

Ingredients

1 cup finely diced white onion

1 cup shredded zucchini, squeezed of surplus moisture using a paper towel

2 cloves garlic, minced

1 egg, slightly beaten

1/2 cup italian style panko breadcrumbs (might use GF breadcrumbs)

2 tablespoons organic ketchup

1 teaspoon dijon mustard

1/2 teaspoon ocean salt

For the topping:

1/2 tablespoon honey

1 tablespoon mustard

dash of hot sauce

Instructions

Preheat oven to 375 levels F. Line huge cooking sheet with foil and aerosol with nonstick cooking food spray.

In a big bowl combine turkey, onion, zucchini, garlic, egg, breadcrumbs, spices, mustard and salt and pepper. Make use of the hands or a big spoon to mix until well combined. I discover that it’s easier to combine the ingredients if you use your hands.

Place 1 / 2 of meat mixture in foil-lined skillet and shape into a 10×4 in . rectangle. Best with pepper jack evenly, leaving about an 1/2 in . of room around the sides. Top with the rest of the meat blend, enclosing the parmesan cheese completely and closing the side together.

In a little bowl, whisk together tomato sauce, apple cider vinegar, honey, mustard, soy sauce and hot sauce if desired. Spread half of the amazing sauce on top of the meat loaf, reserve other half for when meatloaf is finished baking.

Bake meatloaf for 45 a few minutes to 1 1 hour or until meats thermometer reads 160 levels F. Best with remaining sauce and invite to cool for 10 minutes before trimming into 6 pieces.

We made this last night for my hubby, who was extremely skeptical of this formula and stated can’t we only need regular meatloaf?”. I took it out of the oven and before I could even snap an image he was digging in! He ate 3 huge slices and desires me to create it again in a few days!
