Pepper Jack Stuffed Turkey Zucchini Meats Loaf with Awesome Sauce

Zucchini, zucchini, ZUCCHINI. It’s overtaking my life. I’m not sure I mind so much, but I can tell you that I’m obtaining sick of shredding the zucchini. I realize I’ve been doing various baked products with zucchini which means this time I needed to enable you to get something a little savory like this turkey zucchini meatloaf. I made a decision that adding some zucchini to a turkey meatloaf would not only be a great way to get my veggies in, but also to add wetness (since I use lean turkey).

So when if that wasn’t plenty of, I just needed to toss in just a little pepper jack in the middle because I’m all about a little kick. It’s funny, I in fact don’t consider pepper jack to become spicy; my Mother used to provide jalapenos at just about any meal so I think my tastebuds have modified to the main point where I can pour oodles of Sriracha on my meals without any effect.

So, for all of you mamas out there or food preppers this is an excellent healthy recipe and makes terrific leftovers. I used to be chowing down onto it for a few days with a good sweet potato on the side.

I’m a HUGE lover of ketchup (such as I put that sht on everything and I don’t buy Heinz), nevertheless, you can easily produce delicious EASY homemade awesome meatloaf sauce yourself. Rely upon the power of this recipe.

LOW CARBOHYDRATE Pepper Jack Stuffed Turkey Zucchini Meat Loaf

Ingredients

1 cup finely diced white onion

1 cup shredded zucchini, squeezed of extra moisture with a paper towel

2 cloves garlic clove, minced

1 egg, slightly beaten

1/2 cup italian design panko breadcrumbs (might use GF breadcrumbs)

2 tablespoons organic ketchup

1 teaspoon dijon mustard

1/2 teaspoon sea salt

For the topping:

1/2 tablespoon honey

1 tablespoon mustard

dash of hot sauce

Instructions

Preheat oven to 375 levels F. Line large baking sheet with foil and spray with nonstick cooking spray.

In a big dish combine turkey, onion, zucchini, garlic, egg, breadcrumbs, spices, mustard and sodium and pepper. Use your hands or a big spoon to combine until well mixed. I discover that it’s easier to combine the ingredients if you are using your hands.

Place 1 / 2 of meats mixture in foil-lined skillet and shape into a 10×4 in . rectangle. Best with pepper jack consistently, leaving about an 1/2 inch of room in the edges. Top with the remaining meats combination, enclosing the cheese completely and closing the side collectively.

In a little bowl, whisk together tomato sauce, apple cider vinegar, honey, mustard, soy sauce and hot sauce if desired. Spread half of the awesome sauce on top of the meat loaf, reserve other half for when meatloaf is completed baking.

Bake meatloaf for 45 a few minutes to 1 1 hour or until meats thermometer reads 160 degrees F. Best with staying sauce and allow to great for 10 minutes before reducing into 6 slices.
