Zucchini Banana Delicious chocolate Chip Muffins are healthy, damp and insanely delicious! Who wants one?!

Therefore, here we move. I’m letting you know 10 random reasons for having me. There’s no rhyme or reason to it!
I actually blew out the speakers on my new car following a month. I’ll go deaf. No biggie.

These zucchini banana muffins? MY FAVORITE MUFFINS EVER! NO SERIOUSLY. EVER.
Reacall those zucchini brownies I made last week? Holy fudge those were delicious and kind of got me a wee bit obsessed with zucchini. I’m sure you might have a good amount of zucchini that should be used up, too!
Anyway We thought that I might as well place them in muffins… you men know how much I love muffins.
I actually wonder if the muffin man is certainly hiring an assistant? Probs not.
These muffins are incredibly damp from a multitude of healthy ingredients: zucchini, applesauce, banana, greek yogurt and a tiny bit of coconut oil.
All of these substitutes help to keep the calories from the muffins in balance which allowed me to include in chocolate potato chips so they feel a bit indulgent at exactly the same time.
If you bake these, I highly recommend using whole wheat grains pastry flour. From the lighter whole wheat flour that keeps cooked goods light and fluffy. If you can’t find it at the store, I would recommend using a mixture of whole wheat grains and all-purpose.
Enjoy these big, soft healthy muffins. They’re refrigerator friendly and a terrific way to use up zucchini!
1 1/4 teaspoon cooking powder
1/2 teaspoon baking soda
2 little to medium ripe bananas, mashed
1 teaspoon melted coconut oil
1/4 cup honey
1 teaspoon vanilla
2 egg whites
2 tablespoons unsweetened applesauce
1/2 cup mini or regular chocolate chips (I like mini)
Preheat oven to 375 levels F. Line 12-cup muffin tin with cupcake liners and generously squirt inside of liners with non-stick cooking spray.
Squeeze shredded zucchini of surplus water using a paper towel! That is an important stage.
In medium bowl combine flour, baking powder, baking soda, and cinnamon; reserve.
In bowl of a power mixer, add mashed banana, oil, honey, vanilla and eggs; combine until smooth. Add in zucchini, applesauce, and yogurt and beat once again until well mixed. Slowly mix in dry elements until just mixed. Remember never to over combine the batter – we wish moist muffins! Gently flip in 1/2 cup of chocolate chips.
Evenly divide batter into muffin cups. The batter will probably reach the top of every muffin liner, but that’s alright – we’re producing big muffins! On the other hand you can reduce the size and bake 15 muffins. Bake for 20-25 a few minutes or until toothpick put into the middle happens clean. Enjoy!-
Zucchini banana could be my all period favourite muffin flavour. I can’t wait around to try your version. I’ll make sure they are on Sunday, probably with the help of walnuts.

I’m really excited to try these! Do you consider it would make any difference in structure if I removed the delicious chocolate? I am even more of a fan of nuts than chocolate in my own breakfast baked items and was thinking about subbing in walnuts?

One issue I ran across was that the muffins stuck towards the paper- despite the fact that I actually sprayed the mugs. Next time I will make use of foil liners.
