Low Carb Eggplant Lasagna with the very best Turkey Meat Sauce + Burrata

Lasagna minus the noodles. It’s something in my existence. An extremely delicious thing which i needed to give out just with time for eggplant period!

Let’s backup a sec though. Before I talk about the recipe details with you, I have to inform you of my lasagna obsession. Flashback to around my 21st birthday once i asked my Mom to create me lasagna. First of all, three days ahead of my birthday I needed came back to America from my journeys wine consuming and vacationing around within the land of Oz, therefore my 21st birthday didn’t seem all that exciting.

Alternatively, my Mom was THRILLED. She wished to make me something particular for my birthday and asked for requests. I believe she was anticipating me to state enchiladas (I always request them), when I asked for any vegetarian lasagna she was surprised. However, being the lovely mother she actually is, she ended up producing me the very best LASAGNA EVER. It had been a huge 9×13 inch pan loaded with spinach, butternut squash, mozzarella, parmesan and whole wheat noodles. I ate two slices and refused to talk about with anyone else. Seriously refused. I held the leftovers in my own refrigerator and ate the rest each day for weekly.

This story would have to be shared because it’s what started my lasagna obsession. From that second forward, I started remembering every time I ate lasagna. From the first time I fulfilled Tony’s parents towards the last family Christmas party, I never forget a lasagna.

And now we have this eggplant lasagna to remember! This particular recipe is based off my no noodle zucchini lasagna , that is basically coating upon layer of zucchini, cheese, meats and sauce.

Oh me likey. Me likey a whole lot.

Eggplant lasagna could be my new favourite though, mostly due to the insanely good turkey meats sauce. OH MY GOD. Just make the sauce and ladle it in your mouth. (Or of course you can make the actual formula.) I am declaring this my famous turkey meat sauce. Hopefully you’ll agree.

Anyway let me quit jabbering and explain the whole lasagna process here!

First we’ll make the epic most famous Ambitious Kitchen turkey meat sauce. Yes, you are going to placed on your extravagant jeans and make your own sauce. It’s a game changer in the lasagna world.

While that’s simmering up, you’ll bake the eggplant. I recommend peeling the eggplant once you bake it, or just cut off your skin because it can be hard to cut through in the lasagna. As you can see I didn’t lower it off, but I mentioned within the things that you should.

After that’s done, you’ll execute a layer of meat sauce, eggplant, ricotta and burrata. The burrata makes stuff extremely creamy, but if it’s not your thing, refreshing mozzarella is a superb substitute!

Bake until bubbly. Broil by the end to have the cheese on top nice and golden brown. DIG IN!

1/2 yellow onion, minced

3 garlic cloves, minced

1 (6 oz) can tomato paste

1/2 cup water

1 tablespoon dried oregano

1/4 teaspoon fennel seeds

1/8 teaspoon freshly ground black pepper

1 huge eggplant, cut lengthwise into 1/4 inch slices (about 6-8 huge slices)

1 cup part skim ricotta

1 egg


Preheat the oven to 375 levels F.

Place essential olive oil a big dutch range or container over medium high temperature. Once oil can be hot, add in turkey, onion, bell pepper and garlic clove. Split up the turkey and make for 5-8 minutes or until turkey is no longer pink.

Next add in diced tomato vegetables, tomato paste, water, basil, dried oregano, fennel seeds, salt and pepper. Mix until well combined then reduce high temperature to low, cover and simmer. Mix every short while.

Place sliced eggplant on huge cooking sheet coated with nonstick cooking aerosol. Sprinkle with sodium and roast in the oven for 10-15 minutes to help dry the eggplant a little. This is a critical step. After eggplant is performed cooking, remove or take off it’s skin.

While eggplant is food preparation, you can blend together the ricotta, parmesan and egg inside a medium bowl until well combined. Once eggplant is performed cooking, take away the turkey meats sauce from the heat and allow to cool a bit. After they have cooled off for a few a few minutes, add 1/2 glass of meats sauce towards the ricotta mixture.

To put together lasagna, pass on 1/2 from the turkey meat sauce in to the bottom of the 9×9 inch baking skillet coated with nonstick cooking squirt. Place half of eggplant pieces evenly over meat sauce, spread on 1/2 from the ricotta combination, then break apart half of the burrata and drop on top (I simply break up the burrata with a knife). Repeat levels again you start with the meats sauce, eggplant slices and ricotta mixture and completing with burrata at the top. Cover with foil and bake for 40 min. Remove foil and broil for 5-10 moments or until parmesan cheese is golden brownish and bubbly at the top. Serve using a side salad. Acts 6.
