Pepper Jack Stuffed Turkey Zucchini Meat Loaf with Awesome Sauce

HEALTHY LOW CARBOHYDRATE Turkey Zucchini Meat Loaf filled with pepper jack and topped with great tasting sauce EVER!

Zucchini, zucchini, ZUCCHINI. It’s overtaking my life. I’m not sure I mind a lot, but I can let you know that I’m obtaining sick of shredding the zucchini. I have a few more to use up but after that I don’t believe you’ll see another zucchini formula from me in quite sometime. My right arm in physical form hurts from zucchini shredding symptoms. Yes, it’s officially a syndrome (in the AK book anyhow).

I realize I’ve been doing various baked products with zucchini which means this time I wanted to bring you something just a little savory like this turkey zucchini meatloaf. I decided that adding some zucchini to some turkey meatloaf would not only be considered a great way to obtain my vegetables in, but additionally to add wetness (since I take advantage of lean turkey).

So when if that wasn’t enough, I just had to throw in a little pepper jack in the middle because I’m about a little kick. It’s funny, I actually don’t consider pepper jack to become spicy; my Mom used to provide jalapenos at just about any meal so I think my tastebuds have modified to the point where I can put oodles of Sriracha on my foods without any effect.

Not sure if that’s a very important thing or not?

So, for everyone mamas around or meal preppers that is an excellent healthy formula and makes terrific leftovers. I used to be chowing down onto it for a couple days with a nice sweet potato privately.

The awesome sauce is well… AWESOME. It’s sweet but spicy and really adds a ton of flavor towards the meatloaf. (It’s originally from my lentil loaf recipe)

And please don’t put that Heinz corn syrup stuff on your meatloaf. Yes I just said that; don’t hate me!

I’m a HUGE enthusiast of ketchup (as in I place that sht on everything and I don’t purchase Heinz), however you can easily make delicious EASY homemade amazing meatloaf sauce yourself. Rely upon the power of the recipe.

LOW CARBOHYDRATE Pepper Jack Stuffed Turkey Zucchini Meat Loaf

Ingredients

1 cup finely diced white onion

1 cup shredded zucchini, squeezed of unwanted moisture having a paper towel

2 cloves garlic clove, minced

1 egg, slightly beaten

1/2 cup italian design panko breadcrumbs (may use GF breadcrumbs)

2 tablespoons organic ketchup

1 teaspoon dijon mustard

1/2 teaspoon sea salt

For the topping:

1/2 tablespoon honey

1 tablespoon mustard

dash of hot sauce

Instructions

Preheat oven to 375 degrees F. Line huge baking sheet with foil and squirt with nonstick cooking spray.

In a big dish combine turkey, onion, zucchini, garlic, egg, breadcrumbs, spices, mustard and sodium and pepper. Use the hands or a large spoon to mix until well mixed. I find that it’s much easier to combine the ingredients if you are using your hands.

Place 1 / 2 of meats mixture in foil-lined pan and shape into a 10×4 in . rectangle. Top with pepper jack equally, departing about an 1/2 inches of room on the edges. Top with the remaining meats mixture, enclosing the parmesan cheese completely and closing the side together.

In a little bowl, whisk collectively tomato sauce, apple cider vinegar, honey, mustard, soy sauce and hot sauce if desired. Pass on half of the awesome sauce on top of the meats loaf, reserve other half for when meatloaf is completed baking.

Bake meatloaf for 45 a few minutes to 1 one hour or until meat thermometer reads 160 levels F. Best with staying sauce and allow to awesome for 10 minutes before reducing into 6 slices.

We made this last night for my hubby, who was extremely skeptical of the recipe and stated can’t we just have regular meatloaf?”. I took it out of the range and before I possibly could even snap a picture he was digging in! He ate 3 huge slices and desires me to make it again next week!
