This Summer has been full of margaritas, travel, baseball, and SO MUCH FOOD. I’ve sensed therefore blessed to have the ability to take so many weekend trips in between my long function weeks. The photos below capture some of the moments of a few journeys to Miami, North & SC.

You can even check out my Trip Consultant profile to check out some of the places I’ve stayed. I need to get better about critiquing the restaurants I’ve consumed at. That’s on my to accomplish list next!

I REALLY LIKE margaritas. They are hands down my favorite beverage and what better place to enjoy them then beautiful, sunny Miami?! I was in Miami for a vacation to the BlogHer food conference wayyy back in May. Our air travel was in fact diverted to Fort Myers for a couple hours to due a tornado AT THE MIAMI AIRPORT.

Every thing turned out to be fine, but we were kept on the runway for hours! I remember leaving Minneapolis around 10am and not arriving in Miami until 9pm. Therefore, a margarita was required.

Next up! The FOOD. Miami is well known for their amazing meals and I was not disappointed. I took complete advantage of savoring everything Hispanic inspired including big bowls of guac, plantain chips, and AMAZING RICE.

Surprisingly I worked out everyday within my trip. The downtown Hilton Miami experienced a good workout middle and we strolled nearly just about everywhere we went, as well!

This was a little appetizer selection from a celebration with Stitch Fix ! We munched on mushroom bruschetta, wine, cheese, and amazing bacon covered fig. AGAIN, so much food.

Right here was the view from my hotel room. It was very humid outside, but everything I cherished.

Meet my eating partner in crime, Maegan ! We actually ate everything we could in Miami, buying a bit at every bakery and cafe we went.

One evening we made a decision to walk from downtown to South Beach to consume dinner at among Jose Andres’ restaurants. I think it was approximately three miles along with a bit frightening, but we required the exercise! I mean just take a glance at what we were eating…

Sticky buns. Coconut Wedding cake Shakes. Cookies.

OH MY.

I think the best was most likely the coconut cake shake. It had been totally delicious and I adored the raspberry that was included with it.

Then there were these AMAZING cookies that Meagan simply needed to get and undoubtedly, I had developed to take a handful of bites.

The main one with coconut, pecans and delicious chocolate was absolutely fabulous. But I actually had to avoid after two bites. I simply couldn’t eat anymore.

Following a few fun days in Miami, I jetsetted over to NEW YORK for a short weekend with Tony.

Even better than all the food in the world.

I love being able to see him pitch. It in fact keeps me thinking about baseball. He in fact got moved up to new group this week, which is very exciting! I’m so pleased with him.

Of course after a short visit to see him, it’s back on another airline flight in the wee hours of Monday morning hours so I will get back again to my regular job.

I wasn’t back Minneapolis for an excessive amount of longer before I put another trip planned back again. That one was a genuine vacation!

Tony and I planned a trip to Myrtle Seaside, South Carolina. I had under no circumstances been to South Carolina, but I used to be SO thrilled to lay on the beach and relax.

Ps. if you’re ever at the Minneapolis airport terminal, eat at French Meadow! Their organic breakfasts are AMAZING.

Tony picked me personally up from your Charlotte airport and we drove roughly three hours to Myrtle Beach. We stayed at a resort near Broadway, a location where all the nightlife was. It had been an excellent 20 minute walk towards the beach, but I really like walking therefore i didn’t mind.

Once we arrived, it was glorious. The beach was beautiful with easy, warm sand along with a salty ocean air flow.

Just what I needed.

We spent most of our times enjoying cocktails and going swimming. Myrtle Beach really does not have that great of meals, so I wasn’t that impressed with the restaurants. We just were pleased to have the ability to forget about baseball and work with a bit. Sometimes you merely need a little travel to reveal, you know?

During the night, we went out with one of Tony’s teammates who also been in Myrtle Beach along with his girlfriend. Each night we stayed out past due and danced the night time away.

If you are in Myrtle Beach, you might browse the ferris wheel overlooking the sea. I didn’t get yourself a chance to accomplish it, but believe it would have been fun!

I wish I had been back in that ideal weather right now.

After our trip to Myrtle, we drove back to North Carolina where I proceeded to BAKE ALL THE COOKIES. Because that’s precisely what I do.

I also surely got to see Tony pitch within the 4th of July.

And watched him eat a significant amount of food.

We planned a date evening in because we were sick of extra cash and because we like cooking jointly; it’s fun to flavor test, drink wine and disagree on how things should be made.

I really wanted to help to make The Pioneer Woman’s Baked Ziti , but with a healthy makeover. I literally think it’s one of the better italian meals I’ve ever made myself and recommend it.

Here’s it going into the oven. I have no idea why my muscle groups look therefore jacked, but I’ll take it.

The finished dish was amazing. We paired it with a aspect salad and garlic clove bread. I experienced good about working 5 mls that day.

Cause the very next day I ate two of the cookies AND THEY WERE GLORIOUS.

Then I returned on another aircraft to Minneapolis.
